Ms.Biz was diagnosed with Celiac Disease in July of 2005. She has tried many gluten free products, but could never find a bread product that she liked. Many people had recommended baked products, and Ms.Biz would eagerly go out and buy the product, only to later throw it out. Most were flavourless, many crumbly, and none good enough that she wanted to eat. Her husband got sick of her walking through a gluten free isle, hearing her mumble, "wheat free, gluten free, flavour free".  So, she tried making her own, with unpleasant results. This lead her to give up all bread products. She became depressed at her gluten intolerance.

Finally she registered in a local gluten free bread-making course. The bread was terrific! It was so good that she served it at her family's Thanksgiving Day Feast. She never told anyone that the bread was gluten free, just that it was homemade.  Her family loved it!

That same weekend her job was cut, and her car died. So here she was at home, with no vehicle, no job, and frantic to figure out what to do.She started making the bread on a regular basis, perfected the technique, and tweaked the original recipe.
